Pumpkin Spice Cake

Note to self: Don't pick a Weight Watcher's Wednesday recipe while super hungry - you will most likely pick a random, fall inspired cake that will make everyone wonder about you. This cake was really good, although not as good as this one. I thought the oil was really high in this recipe so I cut it down to 1/3 cup. You could also cut the sugar down to 1.5 cups, but maybe that's just me :) Here's the original recipe, edit as you see fit!

Pumpkin Spice Cake - 6 points plus

Cake Ingredients
3 cups flour
2 cups sugar
1 tablespoon pumpkin pie spice
1 tablespoon baking powder
4 eggs
1 15 oz can Pumpkin (real, plain pumpkin)
1/2 cup oil
1/2 cup milk
2 tsp vanilla

Glaze
3/4 cup confectioner's sugar
1 1/2 tablespoons lemon juice
In a bowl stir together flour, sugar, baking powder and spice. In another bowl, whisk together pumpkin, eggs, vanilla, oil and milk. Slowly combine wet and dry ingredients until mixed through. Pour into greased bundt pan and bake 55-60 minutes or until a knife pulls clean. Cool in pan about 10 minutes, remove from pan and cool about 30 minutes. Meanwhile, stir together glaze and pour over warm cake. Serves 20.

Calories: 239, Fat: 7, Fiber: 2g, Protein: 4g

My friend Jessica just sent us this email with Walmarts new gas discount announcement:

Today, Walmart announces a 90-day Rollback at the pump to give customers a savings of 10 cents a gallon on all fuel, gas and diesel, at participating Murphy USA and Walmart gas stations. The discount applies to gas purchases made when using a reloadable Walmart gift card, reloadable Walmart MoneyCard? or Walmart credit card from June 29 through September 30, 2011.
Customers who use the Walmart family of cards to buy gas at participating gas stations will immediately save 10 cents a gallon on purchases right at the pump, with no other restrictions or requirements.

Menu Inspiration Monday 6/27

Y'all know how much I love Brinner. I wrote a whole post about it here. We made this apple compote this weekend to go with the best homemade buttermilk pancakes in the world and just enjoyed it to pieces! If you aren't having Breakfast for dinner at least one night a week you're totally missing out!

Buttermilk Pancakes with Apple Compote

Pancake Ingredients
3/4 cup all purpose flour
3/4 cup wheat flour (or all regular flour)
3 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups low-fat buttermilk
3 tablespoons oil
1 egg
1 egg white

Apple Compote Ingredients
2 apples, cored and diced
1/4 cup sugar
1 tsp cinnamon
1 tsp lemon juice
1/4 cup cornstarch
1 cup water

For the Compote:
Combine all ingredients except water in a saucepan and simmer over medium heat until apples have softened. Add water slowly, heating through until a syrup forms. Simmer on lowest setting while making pancakes.

For the Pancakes:
Mix together the dry ingredients in one bowl and the wet ingredients in a separate bowl. Combine wet and dry mixes and stir just until everything is combined. Use an ice cream scooper (or a measuring cup) to make sure each pancake is the same size and cook a few minutes on each side until very lightly browned on each side. I use a griddle and sometimes butter the griddle depending on who I'm making these for :) Serve pancakes with apple compote and enjoy!

Here are the best deals at Walgren's this week.I have highlighted my favorite deals in red and have a beginner's scenario at the bottom to get you started.

**If you are new to shopping Walgreens start with a "How-To" Video here.

Remember these things when you are shopping at Walgreens:

1)Always hand over the manufacturers coupons first when using a store and manufacturer coupon. After the manufacturer coupon is scanned, THEN hand over the Walgreens coupons (this will make it so their register doesn’t beep and will allow for overage if applicable.)

2) You can only use one manufacturer coupon or register reward per item purchased (walgreens coupons dont count). Try and find a clearanced item or something cheap with in ad coupon as a filler if needing to use several coupons or register rewards to pay.

3) Many items are free after Register Reward or RR. A Register Reward is printed AFTER you checkout with the particular item and can be used like Walgreens money in store. Two things to remember about Register Rewards: A) They are read like a coupon in the register so make sure you have more than one item if using a register reward and manufacturer coupon for an item. B) If you use a register reward to pay for the same item you received the register reward for, it will NOT print again. You can alternate with other register reward items and it will print fine.

4) If they are out of an item you are shopping for, get a rain check!

This was a really good soup - although next time I think I'll use a can of RoTel instead of the Fire Roasted Tomatoes and fresh ears of corn instead of frozen so it will be a little less sweet. If you want a flavorful, filling soup then this is for you! I thought 7 pts seemed high for one bowl of soup, but after the 1.5 cup serving I was really full.

Mexican Style Chicken and Corn Soup - 7 PointsPlus

Ingredients
2 tsp olive oil
2 cups shredded, cooked chicken breast
3 cups chicken broth/stock
1 14.5 oz can fire roasted tomatoes
1 4 oz can green chiles
2 garlic cloves
1 tsp chili powder
1 10 oz bag frozen corn
1 onion, chopped
1 red bell pepper, chopped (i used green)
1/4 cup cilantro, chopped
1/2 avocado chopped
8 baked chips, broken into pieces

In a large pot, saute onion and bell pepper in oil until softened, about 7-8 minutes. Add garlic and saute a min or two more. Add chili powder, stock, tomatoes, chiles, corn and chicken. Bring to a simmer. Stir in cilantro and avocado. Pour into four bowls, 1 and a half cup servings each.

Serving Size: 1 1/2 cups and 2 baked chips

Calories: 295, Fat: 7g, Carbs: 33, Sugar: 9g, Fiber: 7g, Protein: 28g

This is my all time favorite Banana Pudding recipe. It's the old Eagle Brand recipe and it is just so good! You can make it low fat by following my recipe below or use the full fat versions of each - I promise with my recipe you can not even taste the difference from the original! This can be made in a trifle bowl or with just two layers in a 9x13 pan.

Ingredients

1 box Vanilla Wafers (do everyone a favor and splurge on the Orignal Nabisco variety)

1 can fat free Sweetened Condensed Milk

1 8 oz tub light cool whip

1 4 serving box INSTANT Vanilla Pudding Mix

1 1/2 cups cold water
3 large bananas (more or less to taste)

In large bowl, combine sweetened condensed milk and water. Add pudding mix; beat until well blended. Chill 5 minutes. Fold in whipped cream. Spoon 1 cup pudding mixture into 2 1/2-quart glass serving bowl. Top with one-third each of the vanilla wafers, bananas and remaining pudding. Repeat layering twice, ending with pudding mixture. Chill thoroughly. Garnish as desired. Store leftovers covered in refrigerator.

Weight Watchers Wednesday 6/15

Today's Weight Watchers Wednesday recipe is sooo yummy! I don't care if you follow Weight Watcher's or not - this is a fantastic side dish! If you want extra spice, use the drained RoTel juice in place of the water. If spice just isn't your thing, be sure to purchase the mild. I'll be making this a lot!

Tomato Rice with Chiles and Corn - 4pts plus

Ingredients
1 cup white rice (I used parboiled, brown would be great too)
14.5 oz can reduced sodium chicken broth or 1 3/4 cup of your own
1/2 cup water (or drained rotel!)
1 can diced tomatoes with chiles, like Rotel, drained
2 cloves garlic
2 tsp chili powder
1 onion, minced
1 carrot minced
1 celery stalk minced
1 tablespoon olive oil
2/3 cup frozen corn kernels
1/4 tsp salt

In a large pan, saute onion in olive oil over medium heat until softened, about 5 minutes. Add uncooked rice and saute until golden, about 4 minutes. Add garlic and chili powder, stir to coat. Add broth, water, carrot, celery and salt, simmer for 15 minutes. Add drained tomatoes with chiles and corn. Simmer covered an additional 10 minutes or until liquid is absorbed. Serve with your favorite grilled main dish and enjoy!

Serving Size 3/4 cup. Calories: 149, Fat: 2g, Fiber: 2g, Protein: 4g, Total Sugar: 4g
*I threw all of the vegetables in my chopper until they were finely minced
