Chicken Tagine

My best friend from college shared this recipe with me recently and it is so good! If you like cumin or "smoky" dishes then I definitely recommend this one. Sorry there aren't any pictures. You'll just have to trust me until the next time I make it :) If making for children you could either cut down the red pepper or omit it from the main pot and sprinkle it on individual servings.

Ingredients
1 T olive oil
4 Boneless skinless chicken breast halves or tenderloins
1 yellow onion chopped
2 cloves garlic chopped
1/2 tsp ground cumin
1/2 tsp ground coriander
2 medium tomatoes chopped
1/2 tsp red pepper flakes
1/2 cup chicken broth
salt & pepper

Heat oil in large nonstick skillet over medium heat. Season both sides of the chicken with salt & pepper. Place chicken in pan and cook until brown, about 6 min. per side. Remove chicken & set aside. Add onion and garlic to pan. Cook over medium heat until lightly browned, about 3 min. Add cumin & coriander and cook another 30 seconds. Add tomatoes, red pepper flakes, & chicken broth. Bring to boil. Return chicken to pan along w/ any accumulated juices. Reduce heat, cover & simmer for 15 min, or until chicken is cooked through. Serve over couscous and enjoy.
