Paula Deen's Mountain Dew Cake



I saw this recipe at my Mother-in-law's house this past weekend in a Paula Deen magazine and knew we had to try it. We absolutely LOVE lemon cakes! Seriously - my husband made me one for my birthday this past year, it was so good. I bet it was gone in 3 days. Now, this cake. Well, it might just be the best cake I've ever had. I bought a 12 pack of throwback Mountain Dew at Target 2 weeks ago when it was on sale for 2.75 - pair that with the $1 off coupon on their website and I got it for $1.75 or .15c per mountain dew! Best of all is that they are made with real sugar, not corn syrup.

If you don't have a 'real' mountain dew on hand I'm sure you could use a generic, Kroger's Citrus Drop tastes pretty close to Mountain Dew to me. I'm pretty sure that next time I make this I'll use apple sauce instead of the oil but for original, first time sake I always use oil so I can tell how big of a difference the applesauce makes.

Mountain Dew Cake
•1 (18.25 oz) box lemon cake mix (I used Duncan Hines, they are my favorite box mixes)
•1 (3.4 oz) box lemon flavored instant pudding mix
•1 (12 oz) can Mountain Dew
•3/4 c. Vegetable Oil (I only used 2/3 cup, couldnt tell a difference)
•4 large eggs
Whisk together the cake and pudding mixes.

Pour in eggs and oil.

Add Mountain Dew.

Mix on lowest setting for 30 seconds until combined and then on medium speed for 2 minutes

Pour into a bundt pan - the color of the batter is beautiful!

Bake 45-50 minutes on 325


Allow cake to cool for 20-30 minutes before removing from pan. Slice and enjoy!

I use vanilla pudding mix, since I like less lemon flavor.

This has been a favorite at my house since first trying two years ago.

If you want a change up by using orange cake mix, vanilla pudding & oranage crush. Its just as good.

My Daughter is 15 now but has been making it on her own for 2 yrs now . good easy recipe to help our kids get interested in cooking . it is a no fail recipe.

I used apple sauce. That cuts down on the "fat". Cakes are always moist.

I use orange cake mix, lemon pudding and mt. dew. I made a pineapple upside down cake with orange cake mix, and applesauce in place of oil for both cakes. Also there's a Weight Watchers cake with an Angel food cake mix and a can of crushed pineapple i.n natural juices

Can I use cook and serve mix instead of instant pudding mix?
