Apricot Chicken Pasta

This has become a household favorite. Serve with Garlic bread and a salad for a complete meal. As with all pasta, it is better the longer it sits and even better the next day. You could also easily serve this meal over rice instead of pasta.

2-3 chicken breast, cubed
1 Tbs butter
1/4 onion sliced thin
2 cloves garlic, minced
1 jar apricot preserves
2 packets turkey gravy
2 cups chicken broth
salt and pepper to taste
12 oz curly-q pasta (cavatappi or fusili)

Boil noodles in a large pot of salted water. Cavatappi is my favorite but I usually have fusili on hand.

Saute onions in butter until translucent.

Add chicken. Once chicken is no longer pink add garlic and saute one minute longer.

Add preserves and stir until melted. Add both packets of turkey gravy and 2 cups of broth. Don't bother getting your measuring cup dirty - the packet is exactly one cup...just fill it up!

Simmer sauce 5-10 minutes.

Add in noodles, toss to coat.
