This won a top prize in the Mississippi Magazine - and why wouldn't it? It is de-lish! If you do not like coconut you could easily sub a white cake mix for the coconut and use your favorite extract: vanilla, almond or lemon would all be fabulous! As with all pound cake, don't forget the berries and whipped cream :)
Ingredients
1 Duncan Hines Coconut Supreme Cake mix
4 eggs
2/3 cup oil
2/3 cup sugar
1 cup sour cream or plain yogurt
1 tsp vanilla
Mix cake mix and sugar in a mixing bowl until well mixed.
Add eggs, oil, vanilla and sour cream. Mix for 2 minutes
Bake in a greased bundt pan for 45-50 min on 350 degrees.
Let cake cool completely before removing from pan. Dust with powdered sugar.
Slice and enjoy :)
