Chili Cheese Dip

We talk a lot about healthy food on this site. I love it, I encourage it and I try and make a healthy version of a recipe 98% of the time. But sometimes there just aren't any substitutes and you have to deal with the un-healthy version if you want to make it. This is one of those recipes. Here's a new twist on the classic RoTel cheese dip and if you like "chili-cheese" stuff, you are gonna love this! You can use all velveeta or cream cheese if you do not want to combine (or buy) both.

Ingredients
8 oz velveeta
8 oz cream cheese
1 can rotel
1 can tamales (should be near the canned chili)
1/2 cup milk

optional toppings
diced tomatoes, shredded cheese and sour cream

In a large bowl combine velveeta and rotel, heat for about 3 minutes or until almost melted through. In a blender or food processor, mince tamales and milk. Add to cheese mixture with cream cheese and heat an additional 1-2 minutes. Serve with chips and enjoy!
