Zesty Lime Sugar Cookies

These are so good and just scream summer! Remember how Krusteaz mixes were part of the last Kroger Mega Sale? Well I bought a box and I noticed on the side of the Krusteaz Key Lime Bars that you can make Key Lime Crisps instead. I made them and they were so good - I just had to come up with a made from scratch version of my own. Here it is and be forewarned: They are addictive and you will want to eat them all. Oh wait, is that just me?

Ingredients
2 cups sugar
1 large lime zested and juiced
1 egg
1 cup butter (I use Smart Balance baking sticks), softened
2 1/3 cups flour
1 tsp baking soda

Combine butter and sugar in a large bowl, cream together until combined. Add egg, lime zest and lime juice (from the whole lime), mix well. Add baking soda and flour a little at a time until all is mixed through. Roll dough into small balls and roll in sugar. Bake for 10-12 minutes on 375. Cool and Enjoy!

Makes 3 dozen

Ironically I just had my first lime sugar cookie last night.. my husband brought it home from our local bakery... and now I stumble across your recipe! I'll have to make a batch.... perfect for summer!

I haven't made these yet, plan on doing so this weekend, but had to laugh because I stumbled upon this recipe a couple of nights ago on another blog (Mommy's Kitchen) but could not for the life of me remember where I'd seen it and worked myself into a good panic when I couldn't find it. Found it! Whew! Let the limey loveliness begin!
