Double Berry Pancakes

We got in late last night and the boys were hungry - my husband suggested pancakes. We did not have any buttermilk so I couldn't make my usual recipe but I did have a mix and thought I'd give that a whirl. I'm not one for boxed pancakes so I thought I'd attempt to spice it up a bit. I had some yogurt on the counter from my Kroger run and some blueberries in the freezer. The result? Double Berry Pancakes.

Ingredients
Box Pancake Mix (prepared as directed for 12-14 pancakes)
1 4-6 oz container of greek strawberry or blueberry yogurt
1 cup frozen blueberries
syrup for serving

Combine all ingredients until just mixed through. Pour by 1/3 cup scoops and serve with syrup. Enjoy!

Thanks ladies - yes! It worked really well. You know how sometimes the box kind of pancakes, especially the whole wheat blend versions, can be kind of dry? Well this took care of that! You could probably use whatever kind of yogurt you wanted and it would work just as well.
