Tomato Basil Pizza

Simple, fresh ingredients that deliver remarkable flavor. Isn't that what it's all about? Feel free to take a short cut and buy a premade pizza dough or crescent rolls. They aren't the star of the show anyway. If you don't have a garlic press you should invest in one. I have no idea where I'd be without mine.

Indredients
pizza dough (recipe here or store bought)
1 teaspoon olive oil
1 garlic clove, pressed
1/2 cup parmesan cheese
2 cups mozzarella cheese, divided
1-2 ripe tomatoes (or enough to cover entire pizza)
1/2 cup shredded fresh basil
salt and pepper to taste

Roll out pizza dough on baking stone or pan. Combine olive oil, garlic, salt, pepper,basil, parmesan cheese and 1/2 cup mozzarella cheese in a bowl. Spread evenly over pizza dough. Top evenly with tomatoes and remaining mozzarella cheese. Bake 20-25 minutes on 400 or until top is gold and bubbly. Allow to cool for a few minutes. Slice and enjoy.
