Cream Cheese Frosting

This is easy peasy. Did you know that softened butter actually refers to butter that just gives to the touch and would hold it's slice if cut into? About 15 minutes on the counter will be just perfect. This ices one cake for me, but feel free to double it if you really like a lot of icing. One of my favorite things to do is add a tub of cool whip to this recipe ... but for those of you who love cream cheese, I know that will never do :)

Ingredients
8 oz cream cheese, softened to room temp
1/4 cup butter, softened (1/2 stick)
1 teaspoon vanilla
2 cups powdered sugar

Combine all ingredients in a bowl, beat for 2-3 minutes with an electric mixer. Frost and Enjoy!
