Pineapple Cheese Ball

I took this to our play group this morning and could not wait to eat some! For some reason this cheese ball always makes me think of Christmas - probably because my Mom always made it at Christmas! It is so good though and should be made year round. This is an old Southern Living recipe and even though the ingredients sound wierd, trust me it is so good!

2 8oz packages cream cheese, softened
1 8 oz can crushed pineapple, drained
1/4 cup finely chopped green bell pepper
2 tablespoons finely chopped onions
2 teaspoons seasoned salt
2 cups chopped pecans, divided

Combine first 5 ingredients; stir in 1 cup pecans. Cover and chill until firm (best if overnight). Shape mixture into a ball and roll in remaining 1 cup pecans. Place on a serving platter and serve with crackers and strips of green and red bell peppers. Enjoy!
