Lemon Berry Cobbler

I love cobbler, mostly peach but I didn't have any peaches on hand last night. I did have blueberries. So, I made a blueberry cobbler - something I've never done before. I like the combination of lemon and blueberry so here it is - My version of an absolutely delicious, make it tonight if you have the ingredients blueberry cobbler. And, of course. top with vanilla ice cream straight out of the oven.

Ingredients
1 16 oz bag frozen blueberries
1/2 cup sugar
1 cup lemonade (I used Simply Lemonade, you could also juice 1 lemon)
1 tbs cornstarch
1 cup flour
1 cup milk
1 cup sugar
2 tsp baking powder
1/4 tsp salt (just put it in the palm of your hand)
1 stick butter (I used Smart Balance)
1/4 cup brown sugar for topping

Melt butter and pour into an 8x8 pan, set aside. Mix 1 cup flour, 1 cup sugar, baking powder and milk until very well combined. Pour dough on top of melted butter in the pan. In a saucepan, combine blueberries, sugar, lemonade and cornstarch. Just bring to boil, remove from heat and strain juices into a bowl, reserving leftover juice (don't drain into the sink!). Spoon blueberries evenly over dough, top with crumbled brown sugar (and a few sprinkles cinnamon if desired) and bake for 25-30 minutes on 400. While cobbler is baking, return juices to saucepan and simmer on low until it creates a simple syrup.
Serve the cobbler hot with syrup drizzled on top and a big scoop of ice cream. Yum! Enjoy :)

Berry cobblers are so good, especially in the winter when summer seems so far away. Yours looks awesome.
