This is one of my favorite semi-homemade meals that doubles as a one dish wonder. I love how quickly it can be thrown together and we all love it. Use sale items and you are sure to have this meal on the table for under $5 total! Use reduced fat products and this is healthy go-to meal on a busy weeknight.
Chicken Stuffing Bake
1 box stuffing mix, any flavor
2 cups cooked chicken, chopped
1 bag frozen mixed vegetables
1 can cream of celery soup (you can also use chicken or mushroom)
1 cup shredded real parmesan cheese (optional)
1/2 cup broth (whatever you have on hand)
1 cup mozzarella cheese
Mix all ingredients except the mozzarella cheese. Spread mixture evenly in a 9x13 pan, top with mozzarella and bake 30 minutes on 350 or until cheese is golden. Serve and enjoy!
