Homemade Peeps

These were actually really easy and I bet you have most of the ingredients in your cabinets! The fun part is you can use any cookie cutter or just cut them out as opposed to most other recipes that require you to pipe out the filling. I found this recipe in my Martha Stewart Magazine and I'm so glad I decided to try it - you should make some tonight or tomorrow!

Ingredients
9x13 Baking Pan
Cooking Spray
1 tablespoon powdered sugar

Peeps
2/3 Cups cold water
2 packs 1/4 oz gelatin
2 cups sugar
1/2 cup room temp water
1/2 tsp vanilla extract

In a 9x13 pan, spray very well with cooking spray and dust with powdered sugar. Remove excess sugar and set pan aside.

In the bowl of an electric mixer, sprinkle gelatin over 2/3 cup cold water. Allow gelatin to soften, about 5 minutes. Isn't the gelatin powder pretty?

In a small saucepan, combine 1/2 cup water and sugar, and stir over medium-high heat until sugar is dissolved. Stop stirring, and place a candy thermometer into sugar water; wipe sides of pan with a wet brush if sugar crystals have splattered up. Boil sugar until temperature reaches the soft-ball stage (238 degrees). Remove syrup from heat; add to softened gelatin. Using the whisk attachment of an electric mixer, hand-stir the mixture a few minutes to cool; place bowl on the mixer stand. Beat on medium high with the whisk attachment until soft peaks form and the marshmallow mixture holds shape, 8 to 10 minutes (I had to mix for 15)
Mix in vanilla and pour into pan. Top with desired colored sugar (I just used the granulated colored decorating sugar) and allow to cool and set, 1 hour. Use cookie cutters to create shapes and roll the edges in more sugar. Enjoy!
