Parmesan Roasted Potatoes

My friend Julie made us some homemade french fries a few weeks ago that were out of this world good! I decided to use her inspiration for these oven roasted potatoes that will be a great accompaniment to any main dish. Make some this week and be sure to grab real, shredded parmesan cheese. I keep this around because I have found I can add it to everything!
Parmesan Roasted Potatoes
Ingredients
4 cups diced potatoes (red or yellow)
1 clove minced garlic (or 1/2 tsp powder)
1 Tbs minced fresh parsley (or 1 tsp dried)
1 cup real shredded parmesan cheese, divided
1 Tbs Olive Oil
liberal amounts of salt and pepper to taste

Either peel or scrub your potatoes really well and dice into cubes. Once diced, rinse excess starch off of potatoes and pour into a large bowl. Combine all ingredients, reserving 1/2 cup parmesan cheese and toss well. Pour out onto a well sprayed baking dish (I line mine with foil too) and roast for 30 minutes on 425. When there are just 10 minutes left, top with remaing cheese and finish roasting.
Serve with your favorite main dish and enjoy!

I love fries and the idea of oven roasting potatoes makes me feel less guilty while enjoying it ... i can't wait to try this out!
