Double Decker Fiesta Tacos

With Cinco De Mayo just around the corner, here is a great recipe that will be sure to feed a crowd! Double it for a larger crowd and serve with 2 minute salsa. Easy, healthy and delicious!

Double Decker Fiesta Taco
1/2 lb lean ground meat
1/2 onion diced
1 can black beans, drained and rinsed
2 cups fresh or frozen corn
1 8 oz tomato sauce
1 packet taco seasoning
1/2 cup water
1 package soft shells
1 package hard shells
1 cup refried beans
toppings as desired

In a large skillet brown meat with onion until completely browned. Add in beans, corn, tomato sauce, seasoning and water. Simmer on low for a few minutes while you prepare everything else. Dice toppings, set aside. Spread refried beans on one side of the soft shell and fold over the crunchy shell. Fill with meat mixture and desired toppings. Serve and Enjoy!
