Parmesan Parsley Potatoes

These are very simple and ridiculously good. Make them this week!

Parmesan Parsley Potatoes
Ingredients
5-6 large red potatoes
1/2 to 1 cup fresh parmesan cheese
1 tablespoon butter
1 to 2 tsp fresh, minced parsley (start with 1 and add more if needed)
1 garlic clove
1/2 cup sour cream
salt and pepper as needed

Scrub and rinse potatoes, skin on and quarter. Boil with peeled garlic clove until just tender. Drain and put in a bowl with butter, sour cream, parsley, salt and pepper. If you like a stronger garlic flavor, smash the clove with the potatoes, if not discard before smashing. Smash with a fork until well combined. Add parmesan cheese and mix through. Serve with your favorite main dish and enjoy!

Delish - I just made these last night but without the parmesan - I love the addition of the cheese! I'll have to do that next time!!!
