Sausage and Peppers over Rice

Super easy, super yum and full of vegetables, healthy - what else do you need? Not much, that's for sure. If you want it "soupier" just add 1/2-1 cup of chicken stock. Fab.u.lous. The pictures are from the first time I made it with just green peppers. It was still really good but I liked the presentation and flavor of the stoplight blend better.

Ingredients
1 package smoked turkey sausage (like hillshire farms)
1 red bell pepper, diced
1 yellow bell pepper, diced
1 green bell pepper, diced
1 large onion, diced
2 ribs celery, diced
1 can diced tomatoes or 2 fresh tomatoes, diced
1 teaspoon paprika
1 clove garlic, minced
3 sprigs fresh thyme
1 tsp olive oil
fresh pepper
rice

*While I always encourage fresh, if you don't have great produce prices in your area look for a 3 pepper and onion blend in the freezer section of your local grocery store and use 2 bags.


Dice all of your vegetables and saute sausage, peppers, celery and onions in a skillet with olive oil, about 5 minutes.


Add tomatoes, paprika, garlic clove, thyme, and pepper. Simmer over medium heat while rice cooks.

Serve over rice and enjoy!
