2 minute salsa

In honor of super bowl sunday I bring you today's treatsy! This is a super quick, super easy salsa recipe that I happen to really love. It tastes so fresh and is a great alternative to store bought salsa. Coincidentally both Rotel and Hunt's tomatoes are part of the mega sale at Kroger making them .50c a can! Cheap, great salsa!

2 minute salsa
1 (14 1/2 ounce) can tomatoes and green chilies *RoTel*
1 to 2 (14 1/2 ounce) can whole canned tomatoes (plus the juice) 

1/4 cup onion (diced)
1 clove garlic
1/4 tsp dried oregano
1/2 teaspoon cumin
1/2 teaspoon sugar
pinch of salt
juice of one small lime
cilantro (I use about 1/4 of a bunch) 

Directions

In food processor or blender place rotel, cilantro garlic and onion. Process for just a few seconds. Add tomatoes, salt, sugar, oregano and cumin. Process all ingredients until well blended. Place in covered container and chill. A couple of hours of chilling will help blend and enrich the flavor. Feel free to double or triple accordingly :)

Serve with your favorite thin corn tortilla chips.
