Coconut Butterscotch Bars - Day 12



I made these for the first time right after the Christmas holidays. I had all of the ingredients and the hubs wanted something new and different to quench his sweet tooth. These are not too sweet and oh so good. Another Cooking Light favorite.

Ingredients
Cooking spray
1 1/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1/8 teaspoon salt
1 cup packed dark brown sugar
3 tablespoons vegetable oil
1 teaspoon vanilla extract
1 large egg
1 large egg white
1/4 cup flaked coconut
2 tablespoons semisweet chocolate minichips
2 tablespoons butterscotch morsels

Preheat oven to 350 degrees.


Coat the bottom of an 8-inch square baking pan with cooking spray. Lightly spoon flour into dry measuring cups, and level with a knife. Combine the flour, baking powder, and salt in a bowl. Combine sugar, oil, vanilla, egg, and egg white in a large bowl; stir with a whisk until well-blended. Add the flour mixture and wet mixture, stir just until blended. Spread batter in bottom of prepared pan. Bake at 350 degrees for 15 minutes; remove from oven.

Combine coconut, minichips, and butterscotch morsels; sprinkle coconut mixture over brownies.
Bake an additional 10 minutes or until a wooden pick inserted in center comes out almost clean
Slice into bars - enjoy!
