Parmesan Chicken


This is a fail proof recipe that will wow anyone it is served to. My mom showed me how to make this and it is so simple, you will fall in love with it! The panko bread crumbs are a must. If you don't have any, make sure to pick some up before you make the dish. This is a really healthy dish that will taste fried but is definitely not :)

Ingredients
1 cup italian style panko bread crumbs
1 cup grated real parmesan cheese (not the powdered stuff!)
4 chicken breast
1/2 cup flour
1 tsp garlic powder
salt and pepper
1-2 eggs
pasta
marinara sauce (whatever your fave is)

Start your assembly line: Combine flour, garlic powder, salt and pepper on one plate, lightly beaten eggs in another dish
and panko and parmesan cheese in a third dish.
Coat rinsed chicken breast in flour, then egg, then panko mixture. (If your chicken is thick either butterfly out, pound thin or buy a thin cut from your grocery store.) Place on a well sprayed baking sheet and bake for 45 minutes on 375.
Boil noodles of your choice, rinse and mix with marinara sauce. Serve baked chicken with pasta and a salad.

Learned a new tip when you bake breaded chicken, fish, etc:  place foil on cookie sheet, then put chicken on metal baking/cooling rack on the foiled cookie sheet.  This makes it crispy on both sides!!  Thanks for the recipe, we're going to have this soon!

I have a question....
My husband is allergic to eggs can I do this without the egg?????

Definitley. You could use an egg substitute or just some chicken broth or milk to make sure the coating sticks to it. Let me know how it turns out!
