Fiesta Bean and Vegetable Medley

I just sort of threw this together for lunch this week and it turned out so good. I stirred in half a cup of uncooked couscous but you could easily serve this over rice or in a tortilla - or just by itself, of course! This would be a great side dish or light main dish.

Ingredients
1 can black beans, rinsed and drained
1 can Rotel (or diced tomatoes if you do not like the spice)
1 8oz can tomato sauce
1 cup diced fresh zucchini
1 cup frozen corn kernals
1 cup diced bell pepper
1 tsp cumin
1 clove garlic, minced or 1 tsp garlic powder
salt and pepper to taste

Combine all ingredients in a sauce pan, simmer for about 10-15 minutes and serve over rice, couscous or in a tortilla.

Top with fresh tomatoes, cheese, lettuce, green onions, sour cream, lime juice and cilantro.
