Rosemary Sweet Potatoes

I could eat these every day. They are that good. And for that matter, I could have eaten the whole pan by myself the other night, ha! These are really easy, really healthy and super delicious. Even my "I don't like sweet potatoes" boys gobbled them up :) These are equally delicious with white potatoes, if you so desire. Try em out - I bet you'll be hooked!

Ingredients
2 large sweet potatoes
1 tbs minced fresh rosemary (or more if desired!)
1 large garlic clove, minced (or pressed)
2 tsp olive oil
1 egg white, slightly beaten
fresh ground pepper, to taste

Preheat oven to 400. Peel, dice and rince sweet potatoes.
In a large bowl combine minced rosemary, garlic, pepper, olive oil and egg white with diced potatoes, stir well to coat.
Pour onto a very well sprayed baking sheet. Make sure nobody is trying to hitch a ride on top of anyone else. Bake for 35-40 min (to desired crunchiness)
Serve with your favorite grilled dish and enjoy!

We eat these ALL the time. Not as much Rosemary since Chris isn't a fan. Your right though, make sure the pan is coated very well! :)

Yum! I make a similar recipe with other herbs in addition to the rosemary and just like you said - I could eat the whole pan myself. I love savory sweet potatoes. I'll have to try your version. Thanks for sharing the recipe.
