Pumpkin Pound Cake

I took this to church on Sunday and it was really yummy! It's going to seem like the batter is too thick, but I promise, it's not. A powdered sugar or cream cheese drizzle would be a great addition if desired.

Ingredients
1 Yellow or Butter Recipe Cake Mix
3.4 oz Instant Vanilla Pudding Mix
4 eggs
1 cup canned pumpkin
1/4 cup water
1/4 cup oil
2 tsp pumpkin pie spice

Combine all ingredients with a mixer, mix for 2 minutes. Pour into a well greased bundt pan, bake for 55 minutes on 350. Allow to cool completely before removing from pan. Slice and enjoy!

This looks like one great cake. I used part of a can of pumpkin, last night and need a recipe to use the rest. This might be just the thing. Thanks for sharing this on My Meatless Mondays. It is a wonderful addition.

Looks yummy! Bet it would be good if I used pumpkin flavored coffee or tea in place of the water. Hmmm, you know me and my Nanny tweaking tendencies, I may just experiment!!! But I love all things pumpkin :)
