Menu Inspiration Monday: Taco Pizza

I love Mexican/Tex-Mex food and could probably eat it every day. We love taco night around here, but this is such a fun alternative! For those with picky eaters, serve the pizza plain with just meat and cheese and let everyone top to their liking.
Taco Pizza
Ingredients
1 prepared pizza dough (easy from scratch recipe here)
1/2 lb ground meat (beef, turkey, pork, whatever)
1 can black beans rinsed, drained (could also use refried)
1 cup frozen corn
1 packet taco seasoning
1 cup salsa
1/4 onion, finely diced
shredded lettuce
diced tomatoes
sliced black olives
sour cream, guacamole and salsa
shredded cilantro (optional)
2 cups shredded cheese

Prepare crust and bake as directed for 10 minutes, remove from oven. In a pan, saute meat and onion until completely cooked through. Add in black beans, corn, seasoning and salsa - heat through. Top partially baked crust with taco mixture, spreading evenly. Top all of that with shredded cheese and back another 10 minutes on 425. Allow pizza to cool slightly and top with desired toppings. Slice and enjoy!
