The Best Blueberry Muffins

I'll be really honest - I actually like blueberry muffins out of the mix. Even worse? I really like the Martha White mixes. I know! Gasp! Well, until these. These rock my world. You should make some this weekend - you won't be sorry.

Ingredients
1 1/2 cups flour
3/4 cup granulated sugar
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/2 cup buttermilk (or 1/3 cup regular milk)
1 tps vanilla
1 cup frozen blueberries
1 tsp lemon zest (optional)

Crumble Topping
1/3 cup white or brown sugar
1/4 cup flour
2 tablespoons butter, cut into small cubes
1 tsp cinnamon

In a small bowl combine all crumble ingredients and with a dough knife or by hand crumble everything until it resembles sand. Set aside. In a large bowl stir all ingredients, excluding blueberries by hand until just mixed through. Carefully fold in blueberries and scoop into muffin pan, filling 2/3 way full. Top with crumble and bake for 20 minutes on 400. Allow to cool slightly and enjoy!

Love blueberry muffins, especially when they have struessel on top. Is there any other way to make a muffin?

Sounds wonderful...I love the crumble topping. For now, at least, my favorite blueberry muffin is the recipe in the OLD Better Homes and Gardens cookbook. It is definitely not a sweet muffin...and the blueberries steal the show (especially, if you are like me and use a lot more than the recipe requires.)

I used to love the Martha White corn muffin mix - when my daughter was little you could usually buy them for .25 cents a box!
