Menu Inspiration Monday 6/27

Y'all know how much I love Brinner. I wrote a whole post about it here. We made this apple compote this weekend to go with the best homemade buttermilk pancakes in the world and just enjoyed it to pieces! If you aren't having Breakfast for dinner at least one night a week you're totally missing out!
Buttermilk Pancakes with Apple Compote
Pancake Ingredients
3/4 cup all purpose flour
3/4 cup wheat flour (or all regular flour)
3 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups low-fat buttermilk
3 tablespoons oil
1 egg
1 egg white

Apple Compote Ingredients
2 apples, cored and diced
1/4 cup sugar
1 tsp cinnamon
1 tsp lemon juice
1/4 cup cornstarch
1 cup water

For the Compote:
Combine all ingredients except water in a saucepan and simmer over medium heat until apples have softened. Add water slowly, heating through until a syrup forms. Simmer on lowest setting while making pancakes.

For the Pancakes:
Mix together the dry ingredients in one bowl and the wet ingredients in a separate bowl. Combine wet and dry mixes and stir just until everything is combined. Use an ice cream scooper (or a measuring cup) to make sure each pancake is the same size and cook a few minutes on each side until very lightly browned on each side. I use a griddle and sometimes butter the griddle depending on who I'm making these for :) Serve pancakes with apple compote and enjoy!
