Whole Grain Buttermilk Pancakes

This is the only recipe you will ever need! This recipe is FAB-u-lous! I'm talking, never, ever buy a pre-mixed kind again fabulous! The ingredients are simple, healthy and the pancakes fluff up like little fluffy clouds of pancake goodness. You can easily add fruit to the batter to make any variety of pancakes you like. Get to the store, buy some buttermilk and have these this weekend! Don't worry about the buttermilk going bad. We'll make sure we make good use of the whole bottle.

Ingredients
3/4 cup all purpose flour
3/4 cup wheat flour
3 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups low-fat buttermilk
3 tablespoons oil
1 egg
1 egg white

Mix together the dry ingredients in one bowl and the wet ingredients in a separate bowl. Combine wet and dry mixes and stir just until everything is combined.

Use an ice cream scooper (or a measuring cup) to make sure each pancake is the same size and cook a few minutes on each side until very lightly browned on each side.

Serve pancakes with your choice of diced fruit, syrup and Spinach and Tomato omelets. Enjoy! :)
