12 Days of Treats - Day Six!

I saw this recipe and knew I wanted to try it. I'm glad I did because they are so.stinkin.good. Again, I used the smart balance baking sticks - makes you feel better about a recipe that calls for a whole cup of butter. yeeeeesh.

Pecan Meltaways

Ingredients
1 c Butter 
1/2 cup powdered sugar
1 teaspoon Vanilla
2 1/4 c All purpose flour
1/4 teaspoon Salt
3/4 cup Finely chopped pecans
Additional powdered sugar for topping
In a mixing bowl, cream butter, sugar, and vanilla until fluffy.
Combine the flour and salt; add to creamed mixture.
Chop Pecans into small bits.
Stir in pecans. Chill about 15-20 minutes.
 
Roll into 1-in. balls and place on ungreased baking sheets.
Bake at 350 degrees for 10-12 minutes. Roll in confectioners sugar while warm. Cool; roll in sugar again.
