Black Eyed Salsa

So last night, after we put the boys to bed, my husband tells me that he has a potluck the next day. Thanks for the advanced notice hon! Nobody felt like going to the store so I viewed my more than stocked cabinets and found some ingredients on hand to make two fabulous dips. I made this one (thanks to all of the free cream cheese) and then I wanted to make this black bean salsa that I have had a few times before. I thought, if I make something I like then it's no biggie if there are leftovers :) I called my aunt to check the ingredients and sadly, I didn't have any black beans or cilantro. Did that stop me? No! I perservered and rocked it out with black eyed peas instead. De-lish!

Ingredients
2 cans black eyed peas, rinsed and drained
2 cans rotel
1 bag frozen corn
1/2 cup finely diced red or green bell pepper
1 clove garlic, minced (or pressed)
1 dry italian dressing packet
1/4 cup vinegar
1/2 cup oil
1/2 bunch of green onions, diced
juice of 1 lime
salt and pepper to taste

Mix all ingredients in a large container. Marinate overnight and serve with tortilla chips - enjoy!
