Freezer Day Check In

Yesterday was a pretty productive day. I got a little over half of everything done. I baked a pound cake for the week, not the freezer. We love this cake, just not necessarily the amount of sugar and oil. In true bethany fashion, I experimented with a healthier version and it was a huge success! I replaced the oil with applesauce and only used 1/3 cup of sugar - We did not even miss it. As you can see in the picture above, the cake turned out just as beautiful as the original recipe!

Here's what I got done:

sloppy joes x 2
spaghetti meat x 1
breakfast pockets
roast chicken, diced (8 cups from 4 chicken breast)
Mississippi Pound cake
meatloaf mixed up and marinated over night

As I type, the quiche x2 are in the oven and the turkey has been brined and ready for the oven when the quiche comes out. After it is ready I'll bake the meatloaf (I think I'll make mini's) and we will be finished! Feels good to be productive. I'll post a picture of everything tonight once it is allllll finished. Can't wait :)

I always make extra meatballs and put them in the freezer. I also peel and half bananas and put them in the freezer. They make wonderful additions for breakfast smoothies.
